Getting into
the Sweet Spirit of Pancake Day

Whether
you like them large or small, fat or wafer thin, pancakes
will be on the menu across the South East as people indulge
themselves in honour of Shrove Tuesday today. (16
February 2010)
In Mount Gambier volunteers from the Uniting Church will
cook for a very important cause when they take part in the
eighth UnitingCare Pancake day selling pancakes for a gold
coin donation outside the Gambier Hotel from 8:00am to noon.
Donations and funds raised will help local UnitingCare
agencies provide practical support to vulnerable members of
our community.
Local UnitingCare Pancake Day coordinator Beth McKay
encourages people in the community to support those in need.
“It really is about local people helping local people.
Every cent counts in the fight against poverty.By
purchasing a pancake everyone can be part of the fight
against poverty.
Together, we can make a difference”
Since its
inception in 2002, more than one million pancakes have been
sold and more than $300,000 has been raised for UnitingCare
agencies in their work to alleviate poverty and disadvantage
in communities state-wide.
“Today is an ideal opportunity to have some fun, enjoy a hot
pancake and support the important work that is being done in
the community.” Mrs McKay said.
Tenison Woods College students will be among
thousands
of individuals, school, community, church and business
groups nation-wide getting into the sweet
spirit of Pancake Day, taking turns at pouring, flipping and
serving pancakes.
Shrove
Tuesday or Pancake Day as it is now commonly referred to, is
the day Christians traditionally ate pancakes to use up all
their fat and eggs before the start of Lent (the lead up to
Easter).
In great
spirits, students and staff from the College will also be
joining forces with Catholic aid and development agency
Caritas to launch the Project Compassion Appeal which will
be launched nationally today.
During
Lent, the school and the Catholic Parish of Mount Gambier
will be holding a massive fund-raising campaign for Caritas
Australia’s Project Compassion Appeal by collecting money
via a number of fundraising activities with the first being
the annual Pancake Day breakfast at the College.
According to Fr Richard Morris, from the Mount Gambier
Catholic Church, the season of Lent provides a timely
reminder of the role we all can play to help people break
free from poverty.
“The support generated every Lent from people in Mount
Gambier allows Caritas to continue to help reduce poverty
and hunger
in over
30 countries
throughout the world.”
“In 2009
the Mount Gambier community raised over $9,000 during the
six week appeal and are hoping to hit the $10,000 mark in
2010.” Fr Richard Morris said.
Perfect
Plain Pancakes
Ingredients

150g self-raising flour
·
1
tablespoon butter
·
1
egg
·
Caster sugar
·
1
cup (250ml) milk
·
Lemon
Directions:
Sift
flour into a bowl and make a well in the centre. Break egg
into the well and gradually combine with flour. Slowly add
half the milk, stirring, until all the flour mixture is
incorporated. Beat until bubbles form. Gradually stir in
remaining milk. Stand batter for at least 30 minutes (if
possible).
Place a
little butter in a frying pan and heat over medium heat
until melted. Discard melted butter and wipe pan clean with
kitchen paper towel. Add another small amount of butter to
pan and heat over medium heat until melted. Place a spoonful
of batter in pan and cook until bubbles appear on surface.
Turn pancake with a spatula.
When
cooked on both sides, slip pancake onto a piece of paper.
Sprinkle with sugar and roll up.
Repeat
with remaining batter.
Serve
pancakes hot with lemon juice sprinkled over top.
